Gumbo cook-off raises money for school

Grace Covenant Academy staff and supporters gathered for the school’s fifth annual gumbo cook-off Oct. 29 at Prien Lake Park in Lake Charles.

Before Lake Charles Mayor Randy Roach announced the winner, attendees were sampling each team’s gumbo and making their own determinations. Samples were available from all participating teams’ booths, but few cooks were willing to share exact recipes.

The Dykes team added seafood to the mix this year. Their beach-themed, “Surf and Turf” reflected the popular ingredients and warm temperature. One competition participant reported her team was happy they no longer have to travel to Maurice for their special secret ingredient, a favorite sausage brand. A father and son who have been cooking the family recipe together for years prepared the Bertrand team’s gumbo.

“This is the winner,” said one attendee about the gumbo from the Mayberry RFD booth. “It’s good and thick and spicy.”

Judges, Rusty Broussard, Adam Moore and Ray Hampton, agreed.

The Guidroz team was announced as the 2016 winner. Chris Guidroz cooked and served a pork sausage and tasso gumbo, but balked at being the booth’s Barney.

The Guidroz booth was decorated with a cardboard Andy Griffith patrol car and vintage props. The canvas backdrop was painted to represent Aunt Bea’s parlor with “photographs” of Andy and Opie transferred onto picture frames painted onto the canvas. The serving table, covered with a blue and white checked tablecloth, held vintage dishes. Women wore full-length aprons, ? la Aunt Bea style.

“My mother has been saying she wants to be Aunt Bea forever,” said Chris Guidroz. “She finally got her wish.”

The Hebert family booth was the winner of the best themed booth award. They used a carnival/circus theme. Drawings of lions and tigers were part of the props. The school’s mascot is the lion and symbolizes the Tribe or Lion of Judah. Dana Hebert repurposed an old filing cabinet to use as a stick-your-head-through child’s photo prop.

The event is held each year to raise funds for the school. This year proceeds were around $13,000.
